5 Ingredient Salad Recipes for Your Next BBQ

I know this post is late because Summer is basically over, but I wanted to share a few quick recipes for my favorite summer salads anyway. These colorful, refreshing bowls of salads have been crowd-pleasers at my BBQs all Summer long. And they don’t require a lot of work either because they only consist of five ingredients each. Just top any of them with olive oil, balsamic vinegar, salt, and black pepper.

Corn Salad

  1. Corn

  2. Basil

  3. Tomatoes

  4. Green Pepper

  5. Red Onion

Boil corn on the cob, shave the corn off the cob with a knife, and let it cool in a bowl for a few hours. Add some apple cider vinegar for extra flavor.

Watermelon Salad

  1. Watermelon Chunks

  2. Fresh Mint

  3. Red Onion

  4. Pumpkin or Sunflower Seeds

  5. Arugula, or leafy greens of your choice

This is the typical watermelon salad I get as a starter at restaurants all the time, especially in NYC and DC, believe it or not.

Spicy Watermelon Salad

  1. Watermelon

  1. Jalapeño Pepper

  2. Crumbled Feta Cheese

  3. Mint

  4. Red Onion

Remove most of the seeds from the jalapeño pepper, so the salad isn’t too spicy.

When it comes to portions and shopping for ingredients, I don’t quite have that information for you because I’m not a chef or professional food blogger. My advice… Just eyeball it and think of how much the average person might eat. For example, the corn salad featured below uses six cobs of corn because there were six people dining in total.
