One-Sheet Pan Meals for Week Night Dinners

No time to cook dinner on a weeknight? No problem! Check out these easy one-sheet pan recipes for a quick, easy meal. My week-night dinners usually consist of two things— protein and veggies. So these one-sheeters are perfect for when I’m busy working late and don’t have time to prep a gourmet meal. Sometimes I even prep these one-sheet pan meals a few days in advance, so that I can just pop them in the oven for 20 minutes or so at a moment’s notice. Plus, this gives the protein some extra time to marinate.

Basic Chicken & Colorful Veggies

No recipe is needed for this one. It’s just oven-baked chicken breasts with multi-colored carrots and potatoes, which I cooked at 375° F until the chicken was white throughout. If you need an exact time, give it at least 30 minutes and check on it by cutting through the largest piece of chicken on the tray to ensure there is absolutely no pink-colored meat inside.

Basic Salmon & Brussels Sprouts

The same goes for this dish! I seasoned both the salmon and brussels sprouts with some salt and pepper. Before putting the brussels sprouts in the oven, I actually sauteed them in a pan with some olive oil, for that nice charred outer shell. This one-sheeter meal cooks within about 15 minutes in the oven at 450° F. Once cooked, I drizzled plenty of balsamic glaze to add a sweet, tangy flavor.

Cod, Greens & Potatoes

This is what I like to consider a “One Sheet Pan Dinner Trifecta,” which consists of protein, vegetables, and potatoes. I discovered this recipe on The Dinner Shift — a food blog created by a mom and nutritionist named Carolyn out in Cleveland, Ohio, who curates recipes for parents “feeding a family after five.” I’m not feeding a family, but I’m always trying to eat healthy meals during the week, so these recipes are a great help for when I run out of ideas for dinner in the middle of the week or get tired of eating the same thing all of the time. In my opinion, repetition is what makes dieting difficult to stick with. This is exactly why I always switch things up and try new vegetables.

Citrus & Fish

And here’s one of my favorite salmon recipes by Averie Cooks, a food blogger sharing easy dinner and dessert recipes. The Sheet Pan Orange Chili Salmon is delish and only takes 30 minutes to prepare and cook. I really enjoy citrus-soaked fish and chicken dishes. The only difference between what I made and what the recipe actually called for is more honey and less chili seasoning.

Simple Old Bay Pan Sheet Dinner

This dinner was created using The Modern Proper’s recipe for Old Bay Shrimp & Sausage Sheet Pan Dinner. I really enjoyed this meal. It was so easy to throw together and who doesn’t love Old Bay seasoning. Depending on your preference for protein, I recommend choosing two of your favorites. For example, the shrimp can be swapped out with scallops instead. Or if you’re not a fan of the chicken sausage, you can swap it out for a meatless option instead.
